The Olive oil

The olive trees are organically grown on 12 acres of terraced Provençal plots, called restanques, and produce a delicate, mild olive oil. Local olive varieties are pressed and blended in accordance with the standards of the Appellation d’Origine Protégée (AOP), a guarantee of quality.

Top quality extra-virgin olive oil directly obtained by physical extraction. The olive grove is composed essentially of the Aglandau trees with the addition of the pollinating Caillon and Cailletier varieties.

    Exquisite drizzled on a red mullet fillet with roasted and raw fennel. Surprising in a recipe of vanilla macaroons with creamy olive oil « ganache ». Simply on ancient tomatoes or purple artichokes from the garden.
