An exceptional winery

The winery, renovated in 2018,

The winery, renovated in 2018, is organised on 3 levels allowing a flow of juices in total gravity and prevents all pumping. On the 2nd floor at reception,
the harvest is sorted on the table. After scraping the grains are moved to the 2 pneumatic presses of the 1st floor controlling the very delicate process of pressing. The juices are then simply transferred to the winery on the ground floor, where the temperature is carefully monitored.

The white grapes, harvested slightly over-ripe for some plots, naturally produce a rich and singular wine. The making of the white wine for some part, is contained in new French oak barrels adding depth to the wine.

The rosé wine is made with respect for the diversity of the grape varieties (mainly grenache, syrah & cinsault) and the distinctiveness of the appellation.
The freshness of the terroir brings a balance between acidity, fruits and roundness. In the winery, the making in small tanks of 32HL allows a wider choice of blends.

Finally, red wine is produced from low-yielding plots with a very high potential for maturity to obtain the concentration and structure, typical of great wines.
The maceration in an amphora-shaped concrete tanks allows for better juice mixing and optimal oxygenation.The aging process lasts an average of 18 months in barrels. The selection of heat planned according to the vintage, the concentration of the juices and colour, in a desire for balance and aromatic complexity.

Respect for the environment, obtain the best of the Coteaux-Varois-en-Provence terroir and remain precise throughout the production cycle: these are the fundamental values to produce the quality of wines at Château Margüi.

Rosé 2020Château Margüi

AOP Côteaux Varois en Provence. - Organic wine certified ECOCERT FR 01

  • Grape : Black Grenache, Cinsault, Cabernet-Sauvignon, Syrah
  • Harvest : Manual harvest in 25 kg crates, meticulous sorting at the vine and on the grape selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-300m
  • Vinification : Grapes are kept at low temperatures for optimal pressing. A resting period of 48-hours and fermentation at 18 degrees.
  • Aged : 5 months in stainless steel tanks.
  • To the eye : Light pearly pink colour.
  • noze : Complex, pear and wild strawberry aromas, confected fruit imbued with aniseed on a fine herbal background.
  • Palate : The palate is soft and coated by the caressing texture. There are aromas of citrus zest, wild red berries, sweet spices, balanced by freshness, subtle bitterness and some pomelo glints on the finish. This wine is complex and long in mouth.
  • Food pairing : Perfect match for the first steamed asparagus, served with grapefruit and yuzu Maltaise sauce or Dublin Bay prawns, with nashi pear and fennel.

White 2019Château Margüi

  • Grape : Rolle
  • Harvest : Manual harvest in 25 kg crates, meticulous sorting at the vine and on the grape selection table. Grapes come from three selected plots on the Estate.
  • Soils : Clay-limestone.
  • Altitude : 200-350 m
  • Vinification : Grapes kept at low temperature. Soft pressing. A resting period of 48 hours and then thermoregulated fermentation at 18 degrees.
  • Aged : 5 months, 25% of which are in French Oak barrels (Tonnellerie Saury, medium heating) and 75% in stainless steel tanks.
  • To the eye : Pale green and crystalline colour.
  • noze : Ripe, with rich and scented flowery character reminding jasmine, hawthorn, honeysuckle, with peachy notes of nectarine intermingles with some lemon, vanilla, cream and sweet spices, on honey background.
  • Palate : Complex, ample and harmonious. Similar to small fruits with white flesh like pears and mirabelles, vine peach and mango. Zesty feeling, with a hint of vanilla, cream and sweet spices. The finish is long with aromatic herbal glints.
  • Food pairing : Again, any fish or shellfish with parsnip, Tahiti vanilla and caviar lemon. A Goats cheese salad from Haute-Provence with rocket and walnuts.

Red 2019Château Margüi

  • Grape : Syrah - Cabernet-Sauvignon - Grenache.
  • Harvest : Manual harvest in 25 kg crates, meticulous sorting at the vine and on the grape selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-300m
  • Vinification : Scraping and treading, macerating three weeks with two windings per day. Temperature controlled between 28 to 30 degrees Celsius.
  • Aged : 2/3 of the juices in new French oak barrels for 18 months, and the last 1/3 in stainless steel tanks for 18 months also.
  • To the eye : Deep purple colour.
  • noze : Delicate and concentrated offering deep black fruit notes, herbal scents such as Mediterranean scrubland and a touch of liquorice.
  • Palate : Rich and round, the tannins are silky. The flavours express intense black fruit, fine herbal scents, black pepper and liquorice. Long and juicy, with a hint of cocoa and bitter cherry lingering on the finish.
  • Food pairing : Rosemary roast lamb from Provence. Guanaja dark chocolate soufflé.

Rosé 2020Bastide de Margüi, 1784

  • Grape : Black Grenache, Cabernet-Sauvignon, Syrah
  • Harvest : Plot selections. The vines are rigourously de-budded and trimmed in order to limit yields and obtain a high concentration of the grapes. Manual harvest in 25 kg crates, meticulous sorting in the fields and on the selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-350m
  • Vinification : Grapes are kept at low temperatures for optimal pressing, de-stemmed and softly crushed. A resting period of 48-hours and fermentation at 18 degrees. Flow of juices in total gravity.
  • Aged : Fermentation with lees-stirring during 6 to 8 weeks. 75 % of which are aged for 5 months in French oak barrels (medium heating-selected for the perfect finesse of its grain) and 25 % in stainless steel tanks.
  • To the eye : Pale robe with salmon lacing and apricot reflections.
  • noze : The fruity aromas make up the bouquet : nectarine peach, mango and wild strawberry complemented by subtle oriental spices.
  • Palate : Ripe fruits combine with a hint of vanilla and slight bitter zests, in the right balance between sweetness and freshness. The large structure of this wine will reveal itself in it's noblest expression, served at a higher temperature than usual.
  • Food pairing : This gastronomie rosé pairs perfectly with monkfish and mango tartare or lobster tajine.

White 2019Bastide de Margüi, 1784

  • Grape : Rolle
  • Harvest : The vines are rigourously de-budded and trimmed in order to limit yields and obtain a high concentration of the grapes. Manual harvest in 25 kg crates, meticulous sorting in the fields and on the selection table. Grapes come from the historical plot of Clos de Mingeaud.
  • Soils : Clay-limestone.
  • Altitude : 300 m
  • Vinification : Grapes are kept at low temperatures for optimal pressing, de-stemmed and softly crushed. A resting period of 48-hours and fermentation at 18 degrees. Flow of juices in total gravity.
  • Aged : Fermentation with lees-stirring during 6 to 8 weeks. 80 % of which are aged for 5 months in French oak barrels (medium heating-selected for the perfect finesse of its grain) and 20 % in stainless steel tanks.
  • To the eye : Pale green and crystalline robe, bright and gold.
  • noze : The first nose reveals scents of delicate oak, freshly roasted almond and coffee aromas, vanilla meringue. At the opening, ripe white fruit notes mingle with subtle white flowers.
  • Palate : The setting in mouth is fresh and structured : the sweetness of the dried fruits merge with the noble citrus bitters. This gastronomic white wine offers length and aromatic persistence on the palate.
  • Food pairing : Bourjassotte figs from Solliès-Pont, pan-fried foie gras escalope. Grilled sole fillet with almond salsa. Poire Martin-Sec poached in wine, vanilla ice cream and almonds.

Red 2017Bastide de Margüi, 1784

  • Grape : Syrah, Cabernet-Sauvignon
  • Harvest : Plot selections. The vines are rigourously de-budded and trimmed in order to limit yields and obtain a high concentration of the grapes. Manual harvest in 25 kg crates, meticulous sorting in the fields and on the selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-350m
  • Vinification : Macerating three weeks with two pump-rotations per day. Temperature controled between 28 to 30 degrees.
  • Aged : Aged 24 months in new French oak barrels.
  • To the eye : Sustained dress with deep purple nuances.
  • noze : Stewed black fruits, coated with sweet spices.
  • Palate : Concentrated aromatic complexity, this powerful wine opens with black fruits: wild blackberry and blackcurrant. The tannins are elegant, melted and enveloped in notes of candied orange, cloves and cacao.
  • Food pairing : Hare "à la royale". Scrambled eggs with fresh black truffles “Tuber Melanosporum”. Grand Cru cacao entremets.
