An exceptional winery

The winery, renovated in 2018,

The winery, which spans three levels, was renovated in 2018 and relies on gravity flow to circulate the wine, dispensing with the need for any pumping. The harvests are delivered to the second floor and sorted on the table. After destemming, the grapes are transferred to the two pneumatic presses on the first floor, ensuring very gentle pressing. The resulting juice is then conveyed to the vat room on the ground floor, a carefully temperature-controlled space.

The white grapes, harvested slightly over-ripe on certain plots, naturally produce rich, singular wines. The vinification of the white wines is partly done in new French-oak barrels and stainless-steel vats.

The rosé wines are crafted to ensure respect for varietal diversity and the appellation’s typicity. The terroir’s cooler temperatures generate the perfect balance between acidity, fruitiness, and roundness. In the winery, vinification in small, 845-gallon vats makes broader choices possible in blending.
The red wines are produced from low-yield plots with very high maturity potential to obtain the concentration and structure typical of great wines. Maceration in amphora-shaped concrete tanks ensures improved intermingling of juices and ideal oxygenation.

The barrel-aging process typically takes 18 months. Heating choices are always in accordance with the vintage, juice concentration, and color in a ceaseless quest for aromatic complexity and balance.

To produce its quality wines, Château Margüi steadfastly honors its fundamental values in winemaking: respecting the environment, bringing forth the best from the Coteaux-Varois-en-Provence terroir, and being precise in every step of the production cycle.

Our wines

Our wines are the quintessence of this legendary terroir. They are crafted in three colors – red, rosé, and white – and in two “cuvées” – the emblematic Château de Margüi cuvée and the more exclusive and atypical Bastide de Margüi cuvée.

Rosé 2024Château Margüi

AOP Côteaux Varois en Provence. - Organic wine certified ECOCERT FR-BIO-01  

  • Grape : Cinsault 45% - Black Grenache 35 % - Cabernet Sauvignon 10 % - Syrah 10 %
  • Harvest : Manual harvest in 25 kg crates, meticulous sorting at the vine and on the grape selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-300m
  • Vinification : Grapes are kept at low temperatures for optimal pressing. A resting period of 48-hours and fermentation at 18 degrees.
  • Aged : 5 months in stainless steel tanks.
  • To the eye : Sandy pink, with white gold rim variation.
  • noze : Fresh floral aromas of peony and lilac.
  • Palate : Notes of fresh grapefruit and crisp red pear, enhanced by licorice and a minerality that makes you salivate. Silky-textured, its freshness manifests itself as an aromatic burst. The pomelo-style bitters are noble, and the spices contribute to a fine balance and a certain aromatic persistence.
  • Food pairing : This table rosé goes perfectly with rhubarb-glazed asparagus, goat's cheese crumble and pomelo maltaise

White 2024Château Margüi

  • Grape : Rolle
  • Harvest : Manual harvest in 25 kg crates, meticulous sorting at the vine and on the grape selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-350 m
  • Vinification : Grapes kept at low temperature. Soft pressing. A resting period of 48 hours and then thermoregulated fermentation at 18 degrees.
  • Aged : 5 months, 20% of which are in French Oak barrels (Tonnellerie Saury, medium heating) and 80% in stainless steel tanks.
  • To the eye : Yellow colour with silver glints.
  • noze : Nose of white cherries and vine peaches, punctuated by light floral touches of honeysuckle.
  • Palate : Dry in profile, it is smooth and silky on the palate, with a polished texture. The acidity is juicy, offering a sensation of freshness characteristic of a cool terroir. Elegant with chewy and zesty notes. The finish of white peach and flowers makes it refreshing with a nice aromatic persistence.
  • Food pairing : Sea bream gravlax, sweet and sour sauce & lemon caviar.

Red 2022Château Margüi

AOP Coteaux Varois in Provence - Organic wine certified ECOCERT FR-BIO-01  

  • Grape : Syrah - Cabernet-Sauvignon
  • Harvest : Manual harvest in 25 kg crates, meticulous sorting at the vine and on the grape selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-350m
  • Vinification : Scraping and treading, macerating three weeks with two windings per day. Temperature controlled between 28 to 30 degrees Celsius.
  • Aged : 2/3 of the juices in new French oak barrels for 18 months, and the last 1/3 in stainless steel tanks for 18 months also.
  • To the eye : Deep ruby colour.
  • noze : Nose of black fruits such as cherry, maraschino and fresh blackcurrant, enhanced by garrigue and a toasty finish in the background.
  • Palate : A wine with balanced acidity offering a sensation of freshness, integrated into the silky, almost satiny texture. The tannins are fine and present in a powdery, chocolatey spirit. The generosity is balanced by the presence of black fruits and spices, such as licorice and intertwined with a vegetal bouquet of Provencal herbs.
  • Food pairing : Beef cheek parmentier topped with spiced sweet potato purée. Terre-mer beef and glazed eel, sautéed carrots with satay.

Rosé 2024Bastide de Margüi, 1784

  • Grape : Black Grenache, Cabernet-Sauvignon, Syrah
  • Harvest : Plot selections. The vines are rigourously de-budded and trimmed in order to limit yields and obtain a high concentration of the grapes. Manual harvest in 25 kg crates, meticulous sorting in the fields and on the selection table.
  • Soils : Clay-limestone.
  • Altitude : 200-350m
  • Vinification : Grapes are kept at low temperatures for optimal pressing, de-stemmed and softly crushed. A resting period of 48-hours and fermentation at 18 degrees. Flow of juices in total gravity.
  • Aged : Fermentation with lees-stirring during 6 to 8 weeks. 50 % of which are aged for 5 months in French oak barrels (medium heating-selected for the perfect finesse of its grain) and 50 % in stainless steel tanks.
  • To the eye : Pink dress, flower petal style
  • noze : Delicate nose, reminiscent of candied grapefruit, enveloped in creamy vanilla on a background of white peach and a touch of toast
  • Palate : The palate is reminiscent of a Burgundy white wine, with its creamy texture and grainy structure. The rosé spirit returns with nuances of grapefruit zest that stretch the finish tinged with spices, coconut milk and pastries such as cookie financier
  • Food pairing : This rosé can age for at least 3 years and should be served with lobster from the islands

White 2022Bastide de Margüi, 1784

  • Grape : Rolle
  • Harvest : The vines are rigourously de-budded and trimmed in order to limit yields and obtain a high concentration of the grapes. Manual harvest in 25 kg crates, meticulous sorting in the fields and on the selection table. Grapes come from the historical plot of Clos de Mingeaud.
  • Soils : Clay-limestone.
  • Altitude : 300-400 m
  • Vinification : Grapes are kept at low temperatures for optimal pressing, de-stemmed and softly crushed. A resting period of 48-hours and fermentation at 18 degrees. Flow of juices in total gravity.
  • Aged : Fermentation with lees-stirring during 6 to 8 weeks. 60 % of which are aged for 5 months in French oak barrels (medium heating-selected for the perfect finesse of its grain) and 40 % in stainless steel tanks.
  • To the eye : Pale and crystalline robe, bright and gold.
  • noze : The first nose reveals scents of delicate oak : acacia, hawthorn, honey and vanilla meringue. At the opening, ripe white fruit notes mingle with subtle white flowers.
  • Palate : The setting in mouth is fresh and structured : the sweetness of the dried fruits merge with the noble citrus bitters and cream. This gastronomic white wine offers length and aromatic persistence on the palate.
  • Food pairing : Roasted quails with peaches. Poire Martin-Sec poached in wine, vanilla ice cream and almonds.

Red 2022Bastide de Margüi, 1784

  • Grape : 60% Syrah - 40% Cabernet-Sauvignon
  • Harvest : Plot selections. The vines are rigourously de-budded and trimmed in order to limit yields and obtain a high concentration of the grapes. Manual harvest in 25 kgs crates, meticulous sorting in the fields and on the selection table.
  • Soils : Clay-limestone.
  • Altitude : 300-400m
  • Vinification : Scraping and treading. Then maceration in concrete tanks for up to three weeks with two pumping overs per day. Temperatures controlled between 28 and 30°C. Flow of juices in total gravity.
  • Aged : Aged 20 months in new French oak barrels.
  • To the eye : Deep purplish color with purple nuances.
  • noze : The wine delivers a balsamic veil, delicately underlined by accents of vanilla and coconut. The fruit gradually reveals itself: bright blackcurrant, sweet blackberry jelly, prune.
  • Palate : The palate is ample and generous, enveloped in a melted freshness that is revived by balsamic touches of rosemary and garrigue. The heart of the palate unfolds a fleshy juice held by tight tannins, promising good aging potential. Small bitter notes of black tea and chocolate add depth and aromatic vibrancy.
  • Food pairing : Slow-cooked pigeon with vanilla-scented parsnip purée and a foie gras sauce infused with oolong tea.

  • Grape : Syrah 50% - Cabernet-Sauvignon 50%
  • Harvest : Plot selections. The vines are rigorously de-budded and trimmed in order to limit yields and obtain a high concentration of the grapes. Manual harvest in 25 kgs crates, meticulous sorting the fields and on the selection table.
  • Soils : Clay-limestone.
  • Altitude : 300-400m
  • Vinification : Eraflage and crush ing, followed by a three-week maceration with two pump-overs per day in concrete “Tulipe” vats. Temperature control (28-30°C).
  • Aged : Aged 24 months in new French oak barrels. Meticulous barrels selection.
  • To the eye : Deep purplish color with purple nuances.
  • noze : Toasted, gradually releasing notes of wild blackberry and black cherry. After aeration, spices such as licorice, chocolate and vanilla.
  • Palate : Suave, the palate is also fresh and full-bodied. The tannin is ripe and structured, still tinged with the imprint of ageing, giving it a lovely texture and aroma. A complete wine with great potential thanks to its aromatic concentration.
  • Food pairing : 7-hour leg of lamb, truffle jus and potato gnocchi
